Knives with Nitrogen Steel. Nitrogen steel is a modern category of stainless steels in which nitrogen (N) is deliberately used as a primary or supplementary alloying element. Knives made from these steels achieve high hardness (and thus edge retention) without the steel losing its extreme corrosion resistance and toughness.
