Knives Shirogami - White Paper Steel
Knives with Shirogami Steel. Shirogami is a series of legendary high-carbon steels manufactured by Hitachi Metals in Japan. It is one of the purest, "simplest" steels in the world. The name "Paper Steel" comes from the fact that the manufacturer historically wrapped different grades of this steel in different colored papers.
Knives made from this steel can achieve exceptional sharpness and are easy to sharpen. However, they are prone to corrosion and require higher maintenance.
