Nakiri knives
Japanese Nakiri knives look like smaller, slimmer versions of a meat cleaver, which are great for chopping vegetables. You can recognize them by their wide, rectangular blade shape. Nakiri knives are the best tool for processing larger vegetables like potatoes, pumpkins, or cabbage, which tend to be very difficult to cut. Thanks to their square shape, they can be used to create very thin slices. The advantage of the rectangular profile of the Nakiri blade is that, unlike non-rectangular Santoku and Gyuto blades, its length does not shorten even with very frequent sharpening. The length of the knife blade most often ranges from 165 - 180 mm.
