Water stones
With water sharpening stones, you can sharpen all types of knives and blades, with the final result depending on their grit.
These stones should be used exclusively with water. Never sharpen them dry. Before you start sharpening, you must soak the water stones in water for approximately 10 minutes. If you are sharpening the knife for a longer period and the stone dries out, you must soak it again. If the stones are "Splash & Go" types, they only need to be wetted.
Advantages and Disadvantages of Water Stones
✔️ Variety of Grits: Available in various grits, from coarse to extra-fine stones.
✔️ Fast and Effective: Provides quick and effective sharpening.
✔️ Clean Process: Water carries away metal particles and debris, resulting in a cleaner process.
✔️ High Performance: The abrasive is usually extremely hard artificial corundum (aluminum oxide), which allows sharpening of steels up to 65 HRC hardness.
➖️ Periodic Flattening: The stone surface needs to be leveled (flattened) from time to time using a dedicated flattening stone.
How to Use a Water Sharpening Stone
Before sharpening, it is advisable to soak the water stone in water for 5–10 minutes (unless it is a "Splash & Go" stone). Sharpen the knife using smooth strokes against the edge (into the stone). If the stone dries out during a longer sharpening session, it must be soaked again. After sharpening, simply rinse the stone gently with water, or use a dish sponge and a small amount of detergent.
